I love eggs. Brisket is pretty darn good too. Huevos rancheros using leftover brisket is one of the best decisions I have made this month.
There aren’t many flavor combinations that can top when you slice your fork down into egg yolk and the egg yolk brings some friends along for the ride…and by friends I mean cooked salsa, fresh onions, avocados, beans sometimes -ok, mouth watering. If you ever have the chance to order traditional huevos rancheros , your taste buds will be doing the happy dance. So much flavor on one little plate. The creaminess of the beans, the warm eggs, the rich in flavor salsa… someone once said the cure for a hangover. I’m not so sure about that one, but it’s worth a shot! It’s a win-win, either way!
I had leftover brisket, so I decided make a couple of recipes. One included these brisket nachos using leftover brisket. I also decided to put a little spin on one of my favorite dishes. Why not!? It did NOT disappoint. I am also a big fan of, “whatever I have in the fridge – that’s what we’re creating with.”
Huevos Rancheros using leftover brisket
1-2 tsp Sriracha Sauce
1 Avocado sliced or diced
Any leftover meat is optional – I had brisket on hand
1-2 tsp finely diced Cilantro
1 Tbsp Salsa (I didn’t feel like cooking mine, so we ate it fresh)
1 Tbsp Sour Cream
Chop up your avocado into slices. Set aside. Warm your leftover meat. Cook your eggs sunny side up.
Remove eggs from pan and add your salsa, meat, avocados and other garnish you like. Drizzle with Sriracha and sour cream sauce. Done!
